A Napa Wine Artilce for Your Viewing

Wine And Food Pairing

The basic golden rule is balance...neither your wine nor your food should be stronger than the other. Choose them to be complimentary to each other. A lightly flavoured dish should have a nice light wine, while food with depth and body can handle some of the heavier, more robust wine varieties. Simply think of your wine as a flavour enhancer, just as you would a spice, and strive not to overpower the tastes of either one. This is the one theme that underlies all the other nuances of food and wine pairings, of which there are many... If you achieve good balance, you have covered all the rest perfectly.

Here is a small list of how to pair wines with Starters and Deserts. My Free Ebook is available to download which will teach you how to pair your wine with all manner of foods and dishes. From Cheeses to Starters and from Meats to Deserts.

Starters etc

Green Vegetables - Chablis or Chardonnay
Caviar - Dry Champagne
Quiche - Pinot Gris, Dry White Burgundy, Pouilly Fume
Soups - Clear broth soups do not pair well with wine. Creamy or rich soups pair well with a Dry White Burgundy. Thick earthy soups pair well with a Pinot Noir or Beaujolais
Fruits other than Citrus
Pair with a Riesling, Gewurztraminer, Port, or Sauternes

Cheeses

Camembert, Brie, and other soft cheese that is not over ripe pair well with just about any red wine such as Red Burgundy, Zinfandel, and Cabernet

Dutch Cheeses such as Gouda pair well with the above mentioned wines as well.

Milder Cheeses fair better with a fruiter red wine such as Pinot Gris, Pinot Noir, or Beaujolais

Most Blue Cheeses have such intense flavours that a sweet wine is needed just to balance the flavours. A Late Harvest or Ice Gewurztraminer, Sauternes, or Johannesburg Riesling should do the trick. Milder blue cheese such as Gorgonzola pair well with a fruity red wine.

Goat Cheeses in general pair well with a dry white wine. Stronger goat cheese is paired better with a sweeter white wine, similar to the wines paired with blue cheese.

As a rule, red wines go well with mild to sharp cheese. Pungent and intensely flavoured cheese do well with a sweeter wine. A little history note: In European Countries it is customary to serve the best wine of the meal with cheese or a cheese course.

No Wine in the Box on the Equinox

September 22nd is the Autumn Equinox and with it comes the cool breezes of fall. So, put away your boxes and your Sauvignon Blancs and get ready for a change in season. Autumn, with its flavorful stews and roasted turkey, has a taste all its own and for you, the wine lover, you get your own flavors too. Here are just a few suggestions for fall food and wine pairing.

Start the season the way that most meals start; with the appetizers. A perfect wine match for appetizers is sparkling wine. Try Castellblanch Cava Brut Zero Reserva, Penedes, Spain , a nice, refreshing sparkler from Spain. Floral aromas and almond flavors combine with waxy texture to get the digestive juices flowing. Castellblanch blends the grapes carefully to harmonize flavor, crispness, and body. The Brut Zero pops out with a refreshing blend of apple, pear, and citrus aromas that carry through from the nose to the finish. The underlying sweetness of the wine cools the effects of hot, spicy, or salty foods. The acidity in the wine makes it a refreshing food and wine pairing for an appetizer table, which tends to include an array of intense flavors.

When you serve turkey, make the harvest celebration complete by serving Castellblanch Monticello Pinot Noir . A nice balance between savory (vegetable and mushroom) and succulent berry fruit make this an interesting and very tasty Pinot Noir. It has a fruity nose, with notes of spicy raspberry and strawberry as well as touches of vanilla and cola. A bit more spice comes through on the palate without disturbing the fruitiness. The wine is full-bodied, but the tannins are light, making it especially suitable at the table.

Prime rib, roast beef or other beef dishes pair perfectly with a big fruity red zinfandel. Watts Old Vine Iris Vineyards Zinfandel will enhance these main courses. Fresh, lively, blackberry aromas and loads of juicy ripe fruit make for a very tasty Zin. The wine offers a great mix of dark fruit aromas with a touch of chocolate, Zinfandel's full-bodied frame, and light tannins. It is the perfect food and wine pairing when beef is on the menu.

Autumn desserts, like pumpkin pie or apple pie, have sweet, spicy, and earthy elements. The perfect pairing for these flavors is Sauternes, a naturally sweet white wine from Bordeaux. Sauternes have the subtle sweetness to stand up to the flavors of fall desserts, and will enhance the sweet, spicy, earthy flavors in the desserts.

So, whatever the course or what is on the menu, there is a perfect wine for you this fall. For this and other food and wine pairings, go to www.kitchentokitchennews.com/Pairing_Food_with_Wine .

Choosing Wine Cellar Accessories

There are a number of nifty items and gadgets that can help
you organize, maintain and enjoy your wine cellar. For those
of you that have a larger wine cellar, keeping track of what
is added or removed from the collection can be a pain. One
can use either a paper record keeping system, or jump into
the twenty first century and incorporate some electronic
record keeping system.

Barcode readers are a wonderful way to keep track of the
different wines that are added to or removed from your
wine cellar. "But what kinds of electronic barcode reading
contraptions will I need to buy in order to use a barcode
system?", you may ask. It's really very simple. There are very
easy to use plug and play barcode readers that can plug
right into the USB port of your computer.

USB barcode scanners typical run between $120-$175 USD
and can automatically discriminate between all the popular
bar codes. You can use your own barcode tags or input any
required information to use the barcodes already located on
each bottle of wine. When it's time to uncork or add a new
bottle of wine to your collection, simply point the barcode
scanner at the barcode label and pull the trigger to update
your records.

Printable wine tags are another must have wine cellar
accessory. These tags come on a sheet that can be fed into
your inkjet printer. You can create your own custom layout
or notes, as well as include a barcode if you so desire. There
are also regular hand written wine bottle tags that can be
more affordable if you do not need to be able to print the
wine bottle tags on your printer.

If you require a tag system that is more durable than paper
wine bottle tags, there are also heavy duty plastic wine
bottle tags that fit securely over the neck of the bottle.
These can be reused as needed and will last for years and
years. These types of wine bottle tags can be written on
with any felt tip pen or a dry erase board marker.

If you'd like a ready-to-go wine bottle tag with custom
barcodes system, check out the Vinote ? wine tags.
These wine bottle tags last a very long time and
adhere snugly to wine bottles. Every tag is uniquely
numbered and bar coded. The bar code section is
perforated so that it may be folded out of sight or
easily torn off.

If you're not ready to update your wine storage
record keeping, and prefer regular paper records,
there are a number of attractive wine catalogue
books already formatted for just such record
keeping. A decent wine catalogue book should be
small enough to carry with you if you will bring it
along on trips to other wine cellars.

A hygro-thermometer is a very necessary component
to any wine cellar, as it ensures that the wine is
resting at the appropriate temperature and
humidity. These devices do not adjust temperature
or relative humidity, but can be paired with the right
devices in order to make sure that everything is
running smoothly.

Ancient Biblical Grape Juice And Wine Drinkers, Raisin Eaters And Teetotalers (part 2) Scriptures (mostly Old Testament) Forbidding Wine Drinking

There were anointed men of the Bible who took an oath; that they would not drink wine or eat or drink any of the products of a grapevine, including fresh grapes, raisins (dried grapes), grape seed, grape skins, or grape juice. This cult of Jews was called Nazirites, that included Aaron, the brother of Moses, his priest descendants; Samson, the Judge; and John the Baptist. The Scriptures suggest there were other temporary Nazirites, such as the Apostle, Paul, and others.

Moses gave special instructions to the Nazirites, who dedicated themselves to God in a very special way to refrain from the ?taste of strong drink or wine or even fresh wine, grape juice, grapes or raisins! He may eat nothing that comes from grapevines, not even the seeds or skins!? Numbers 6:14

?Now the Lord instructed Aaron (brother of Moses) Never drink wine or strong drink when you go into the Tabernacle, lest you die, and this rule applies to your sons (priests) and all your descendants from generation to generation.? Leviticus 10:8

The mother of Samson was told by an Angel, you ?must not eat grapes or raisins or drink any wine or beer? and she was commanded that her son, Samson, must not eat or drink any products of grapes for he was to be a Nazirite. John the Baptist was also a Nazirite and avoided wine & grape products. Judges 13:13

The Prophet, Jeremiah was sent by God to test the obedience of another cult, called Rechabites, with similar prohibitions of grapes and wine to further include, no planting of grape vineyards. It is suggested that these Rechabites, like the Nazirites, were cults of Jewish priests, who were nomads.

?I set cups and jugs of wine before them and invited them to have a drink, but they refused. No, they said we don't drink for Jonadab our father commanded that none of us should ever drink, neither we nor our children forever.? They were also told to plant no vineyards. Jeremiah 35:2

The advice of wine drinking, as given by the Apostle, Paul, to the Corinthians. Paul scorned the people, who at their celebration of communion turned the event into wild parties of eating and drinking wine. Paul said ?I am told that everyone hastily gobbles all the food he can without waiting to share with others, so that one doesn't get enough and goes hungry while another has too much to drink and gets drunk...Can't you do your eating and drinking at home to avoid disgracing the church and shaming those who are poor and can bring no food?? 1 Corinthians 11:28

It appears that Paul suggested that Christians who drink wine should do it in the privacy of their homes to avoid irritating those who objected to wine drinking.

The Apostle Paul said, ?The right thing to do is quit eating meat or drinking wine or doing anything else that offends your brother or makes him sin? Romans 14:21

The Apostle Paul said, ?Don't drink too much wine for many evils lie along that path; be filled instead with the Holy Spirit, and controlled by him? Ephesians 5:18

The Apostle Paul said, ?and there will be wrong doctrine, envy, murder, drunkenness, wild parties and all that sort of thing...will not inherit the kingdom of God? Galatians 5:21

The Old Testament gives several references of wine drinking, that led to drunkenness and led to drastic consequences:

?Noah became a farmer and planted a vineyard, and he made wine. One day he was drunk and lay naked in his tent...when Noah awoke in a drunken stupor,? cursed his youngest son, Ham, who had abused him. Genesis 9:20

?Lot's two daughters said ?Come let's fill him (their father) with wine, and then we will sleep with him.? Both daughters became pregnant and produced the tribes of Moab and Ammon. Genesis 19:32-36

As a result of King David's behavior, he got Uriah drunk and David's sexual contact with Uriah's wife, Bathsheba, led to her pregnancy that led to the death of the baby, and King David had Uriah transferred to enemy front lines, where Uriah was killed in battle. Then King David took the widow of Uriah as his wife and Queen.

?So Uriah stayed around the palace, (King) David invited him for supper and got him drunk.? 2 Samuel 11:13

During the Babylonian captivity, King Belshazzar, who succeeded King Nebuchadnezzar of Babylon, was cursed by God for taking captured sacred cups from the temple in Jerusalem, after he and his ?officers and wives and concubines have been drinking wine from them (sacred cups), while praising gods of silver, gold, brass, iron, wood, and stone.? That very night Belshazzar was killed by Darius the Mede.Daniel 5:23

The Old Testament presents a clear picture that the nation of Israel had become corrupted morally by many factors, including the drinking of wine and spirits.

?And it is not for Kings, O Lemuel, to drink wine and whiskey. For if they drink they may forget their duties and be unable to give justice to these oppressed. Hard liquor is for sick men at the brink of death, and wine for those in deep depression. Let them drink to forget their poverty and misery? Proverbs 31:4

?Wine gives false courage, hard liquor leads to brawls; What fools are to let it master them, making them reel drunkenly down the street!? Proverbs 20:1

?Who is the man with the bloodshot eyes and many wounds? It is the one that spends long hours in the taverns, trying out new mixtures. Don't let the sparkle and the smooth taste of strong wine deceive you. For in the end it bites you like a poisonous serpent; it stings like an adder. You will have hallucinations and have delirium tremens, and you will say foolish, silly things that would embarrass you to no end when sober. You will stagger like a sailor tossed at sea, clinging to a swaying mast. And afterwards you will say, I didn't even know it when they beat me up. Let's go and have another drink.? Proverbs 23:29

The major Prophet, Isaiah, prophesied the coming terrors to Israel, as a result of the moral decay from many factors including drinking wine.

?Woe to those who are heroes when it comes to drinking and boast about the liquor they can hold.? Isaiah 5:22

?Woe to you who get up early in the morning to go on long drinking bouts that last till late at night ? Woe to you drunken bums.? Isaiah 5:11

?All the joys of life will go: the grape harvest will fail, the wine will be gone, the merrymakers will sigh and mourn....No more are the joys of wine and song; strong drink turns bitter in the mouth.? Isaiah 24:7

The minor prophets of the Old Testament wrote vivid descriptions of Israel's decline into drunkenness from drinking wine of the grape from the vineyards.

?Wake up and weep, you drunkards, for all the grapes are ruined and all your wine is gone.? Joel 1:5

?They traded a young lad for a prostitute, and a little girl for wine enough to get drunk.? Joel 3:3

The prophet, Amos, cursed the Hebrews saying ?You drink wine by the bucketful...caring nothing at all that your brothers need your help.? Amos 6:6

The major prophet, Jeremiah, warned all the nations of the world that gloomy fate awaited them, but the prophecy actually came back to be fulfilled against the Jews.

?For the Lord God said to me: Take from my hand this wine cup filled to the brim with my fury, and make all the nations to whom I send you drink from it. They shall drink from it and reel, crazed by the death blows I rain upon them.? Jeremiah 25:15

The prophet Jeremiah 5:10 outlined the ancient military strategy of destroying an enemy vineyard to disable dissenters. ?Go down the rows of the vineyards and destroy them! But leave a scattered few to live. Strip the branches from each vine, for they are not the Lord's.?

Common tactics of ancient conquerers ordered the destruction of agricultural orchards and vineyards, thereby punishing victims and preventing the future resurgence of enemies. Babylonians conquered Israel, carrying them off into slavery and captivity for generations. Seventy years later, the Jews returned to a ?desolate? Jerusalem, to replant their olive trees and grapevines in the vineyards. The Babylonian (Iraqi and Iranian) agricultural terrorism continued with the Greek and Roman empires; repeated in the 20th century in Palestine, when Israel destroyed 50000, mature olive trees at the Gaza Strip in Palestine. The historical peace and goodwill symbol of olive branches was destroyed.

The Oxford Companion to Wine, 3rd Edition (Hardcover)

Windows on the World Complete Wine Course: 2007 Edition (Windows on the World Complete Wine Course) (Hardcover)
by Jancis Robinson (Editor). Here Editorial Reviews of the book
This essential addition to reference collections breaks new ground. Unlike the excellent works by Alexis Lichine (e.g., Alexis Lichine's Guide to the Wines and Vineyards of France, Knopf, 1989. 4th ed.) or Hugh Johnson (e.g., Vintage, S. & S., 1992), which are standard sources on the growing, buying, drinking, tasting, and enjoying of wine, this work broadens the discussion to "less obvious topics, such as animals (their function as vine pests), auctions, the specific influence of the British, and Australians, on the world of wine, fashion, fraud, global overproduction, wine in literature and art, and the role of water throughout wine production." About 3000 alphabetically arranged entries range from the most familiar topics, such as "California," to the quite obscure (e.g., "Xynisteri," a white grape grown on Cyprus). Yet those less interested in the esoterica of wine will surely find the information they seek, as about 70 percent of the book is concerned with specific wines and areas of wine production. There is also practical guidance on such matters as serving wine and matching the right wine with the right food. Editor Robinson, who writes regularly for the Wine Spectator, is widely respected for her taste and abilities. Here she assembles an international cast of over 70 experts. Since only a small number are from the United States and since many may be unfamiliar to the average American reader, this work is also valuable as a kind of directory of authorities on wine-related subjects. While erudite, this book is not dry; historical anecdotes abound. The text is complemented by over 250 fascinating illustrations, which include an aroma wheel, maps, a red wine-making chart, labels, a varietal geneaology, a wine-tasting sheet used by judges, and more. This book, which offers something for everyone, is highly recommended.
